

Banana Coconut Muffins
Make a double batch of these protein-packed muffins to take for a quick breakfast on-the-go, snack, or something sweet!
Ingredients
- 2 Bananas Very Ripe
- 1 Egg
- 1 Cup Unsweetened Almond Milk
- 1/4 Cup Sweetener (Honey or Maple Syrup)
- 1 Tsp Cinnamon + additional for topping
- 1 Tsp Vanilla Extract
- 2 Cups Kodiak Power Cakes Mix-Buttermilk
- Unsweetened Coconut Oil (optional)
- Optional mix-ins: chopped nuts, chocolate chips, cacao nibs, etc.
Instructions
- Preheat the oven to 350 degrees.
- Spray a muffin tin with cooking spray.
- In a bowl, mash bananas. Add eggs, almond milk, sweetener, and whisk until smooth.
- Add pancake mix, cinnamon, and stir.
- Fold in optional mix-ins.
- Divide batter between 12 muffins.
- In a small bowl, add coconut flakes, coconut oil, and cinnamon and toss. Sprinkle coconut mixture over muffins.
- Bake for 18 to 22 minutes.
